Crispy Potato Pancakes 2 cups leftover mashed potatoes (mine were Idahoan four cheese) 4 slices of bacon 1 egg 1 cup shredded cheddar cheese 1/3 cup all purpose flour or all purpose baking mix Dried onion or chive (optional) Sour cream for topping Cut bacon into small pieces and fry until crispy. Drain bacon but leave drippings. Into leftover mashed potatoes add 1 egg, shredded cheese, cooked bacon, 1 teaspoon of dried onions or chives, and 1/3 cup flour or baking mix.
